During this period of social distancing and quarantine, many of us miss the luxury of dining out. Personally, I especially crave weekend brunches with freshly-made waffles. Luckily, healthy recipe creator @healthynre came up with a delicious healthy waffle recipe so I can get my fix.
I might even add these waffles to my weekday rotation, since they only require a few simple ingredients and come together in a matter of minutes.

Healthy Blueberry Oatmeal Waffles
This recipe makes 2 big waffles.

Preheat your waffle iron and lightly brush the surface with some melted coconut oil.

Combine the dry ingredients in a large mixing bowl, and the wet ingredients in another.

Add the wet mixture into the dry mixture until it’s well incorporated.

Pour the batter into the prepared waffle iron and cook until golden brown (should be around 12 minutes).

Carefully remove the waffles from the iron and let cool for 5 minutes before serving with your favourite toppings (fresh fruits, peanut butter, honey, maple syrup and/or yogurt).
