What if I told you can eat your pancakes, and have them be healthy too? We love this pancake recipe by @localplanteater, who creates simple, delicious, plant-based recipes that only use whole, real ingredients.
We recommend adding blueberry overnight oats in this recipe for a delicious flavour boost, but you can also use plain rolled oats.

Healthy Vegan Oatmeal Pancakes

Whisk your ingredients together in a large mixing bowl.

Heat pan with coconut oil.

Add batter to the pan. Once it starts to bubble, it's time to flip the pancakes.

Once both sides are golden brown, remove from pan.

Serve with the toppings of your choice. @localplanteater tops hers with coconut yogurt and frozen blueberries (which were heated-up on low heat a sauce pan, until thawed and some of the juices extracted), cacao nibs & fresh strawberries.
Making your own oat flour
Oat flour is a great alternative to regular flour if you're trying to increase your fibre intake, or want an easy gluten-free alternative to regular flour. Keep in mind that the total volume will decrease, so if you need 1 cup of oat flour, you'll need to grind a bit more than 1 cup of rolled oats.
